Duncan
Duncan is an accomplished chef who travels the world, going wherever he is needed. Working both on-board and shore side, he has 25 years’ experience cooking for the most demanding of clients and in a variety of situations.

In addition to cheffing at the top of the yachting industry, Duncan has been involved in setting up SOPs for yachts of different sizes, over many years, as part of his role as Head Chef.

He both helped to write and regularly teaches on the Ship’s Cook Certificate Assessment and teaches all levels of Food Safety training, as well as being a qualified Powerboat Level 2 instructor.

Mark
With over 30 years’ experience in the yachting industry, Mark worked his way up through the industry, from the bottom to the top.

Now shore based, he has a passion for helping crew members to achieve their highest potential within their yachting careers. 

Mark is a skilled and versatile trainer who excels at teaching RYA Powerboat Level 2, PWC , Food Safety Levels 2 and 3, as well as being a fully qualified assessor for the Ship’s Cook Certificate Assessment course.
Mark also regularly teaches STCW on behalf of other internationally recognised training schools and assists in New Build Services and Galley Set-ups.

Alan Williams

Alan
Alan has worked in the yachting industry for over 30 years, now shore based he is involved in the running of a successful and well-established catering company in the South of France. 

Alan is qualified to teach Food and Safety Level 2 and Powerboat Level 2.

Alan uses his love and passion for illustration to enhance his teaching.

Claire
A skilled communicator, Claire is a key member of the teaching team. A qualified trainer and assessor, with over 20 years’ experience as an accomplished educator across a variety of disciplines, she has spent the last 6 years dedicated to yacht training, helping candidates to progress and excel in their chosen fields.

Claire is authorised to teach Food Safety Level 2 and 3  and on the Ship’s Cook Assessment.

Kim Woodey

Kim
Kim is an IAMI GUEST Accredited Interior trainer with extensive experience working on board large motor yachts, cruising both well-known and far-flung regions of the world.

Having worked predominantly as Chief Stewardess and Purser on both private and chartered yachts, she has been involved in all aspects of the daily running of the vessels, as well as refit and new build projects therefore she knows first-hand the challenges her students may face.

She has trained shoreside, onboard, online as well as in resorts. Drawing on her previous experience as a qualified teacher, Kim is ideally suited to provide a relaxed yet focused environment helping her students gain an in-depth understanding of the highest levels expected in all aspects of the Interior and guest service. Kim is committed to giving flexible, tailored training to each student to help them develop and reach their potential.

Hannah Rose

Chef Hannah Rose is an up and coming name in the Yachting Industry specialising in the world of chocolatier & patisserie. Born and raised in Scotland, Hannah’s culinary journey started in the realm of fine dining, progressing through one and two Michelin-starred restaurants before transitioning to the yachting industry. 

Since embarking on her journey in the yachting industry, Hannah has fine-tuned her craft in both a culinary academy and devoting her time to exploring techniques and ideas on chocolate. In 2023, her remarkable contributions to world-renowned A-list celebrities and charter guests propelled her towards a new venture: sharing her expertise through a demand for an exquisite chocolatier training course, all while continuing her work within the industry onboard M/Y Phoenix2 as Sous Chef. Hannah has collaborated with OceanWave Monaco to share her skillset with other chefs in the industry.

Our aim at OceanWave Monaco is to ensure that we assist Yacht Crew to best carry out their duties to the highest standard, by providing excellent training in an enjoyable and accessible environment. We believe in adapting techniques to individual needs, thereby instilling confidence in candidates to exceed their expectations and reach their highest potential.

Our trainers have extensive knowledge, reflecting their proven experience across all areas of the yachting and maritime industry (both on deck and interior). All of our trainers hold the correct IMO model course 6,09 certificate as required by the MCA Regulation 1/6, Section A-1/6 of the STCW convention and code 1978 as amended.
